Shredded Chicken Caesar Salad Pizza

I made this recipe a while back, but I was looking through my blog last night and saw I never posted it. Earlier in the week, I made chicken in the crock pot, and we had some left over. It was Saturday night, and Saturdays are usually our pizza night, so I decided to combine the two. There's no real source for this recipe, but I combined a bunch of techniques ot of my Better Homes and Gardens cookbook.

Shredded Chicken Caesar Salad Pizza

Ingredients
1 bag lettuce mix
1 tomato - chopped into pieces about 1/2 inch thick
About 1 cup of shredded chicken
1 cup part-skim mozzarella cheese
1 cup Caesar dressing
1 thin crust pizza shell (recipe to follow)

Directions

Preheat oven to 425.

Pizza Shell
Ingredients
1 cup water
2 tablespoons olive oil or cooking oil
2 cups bread flour
1 cup whole wheat flour
2 teaspoons dried basil, oregano, or Italian seasoning, crushed
3/4 teaspoon salt
1/4 teaspoon garlic powder
1 teaspoon active dry yeast or bread machine yeast

Combine all ingredients and knead for about 5 minutes, until firm. Let rise for 15 minutes. Divide dough into two portions. (I froze the other half for later use) Roll dough out onto a pizza pan.


Once pizza shell is spread over your pizza pan, top with chicken and mozzarella cheese. Bake in oven until cheese melts, about 12 minutes. While the pizza is cooking, place the lettuce mix, tomato, and dressing in a large bowl. Toss to coat. Remove the pizza from the oven, and top with lettuce mixture.
