Macaroni Casserole

If you haven't guessed yet, pasta is one of my favorite foods. We eat it very frequently in our household. One of the quick and easy meals I make a lot using pasta is macaroni casserole. We almost always have all the ingredients in the house, so it comes together very quickly.

Macaroni Casserole

Ingredients
1/2 box of small macaroni (penne, rigatoni and rotini all work well) - cooked
3 cups pasta sauce
2 cups broccoli, chopped
1 cup part skim mozzarella cheese



Directions
Preheat oven to 400 degrees. Coat the bottom of an oven safe dish with pasta sauce. Starting with pasta, alternate layers of pasta and broccoli, adding a layer of sauce in between. Top with mozzarella cheese. Place in over until cheese is melted (about 10-12 minutes). Let stand for five minutes so cheese can set after removing from the oven.
