Pepperoni Bread


The other night we needed a quick dinner so I whipped up some whole wheat pizza crust and made some pepperoni bread. The recipe is really simple if you already have the crust made. 



Whole Wheat Pepperoni Bread

Ingredients:
pepperoni, to taste
1 cup part-skim mozzarella cheese
1 egg
Parmesan cheese, shredded

Directions:
Roll crust out onto pizza pan until it is the length of the pan, and about 6 inches in width. Spread cheese and pepperoni down the middle of the dough. Fold the long ends over and attach at the top, concealing the cheese and pepperoni. Fold the other ends up to seal the pepperoni and cheese inside. Brush the crust with egg and sprinkle on Parmesan cheese. Bake at 400 degrees until crust is brown and crispy. 

Servings: With something on the side, this could probably serve 4. Hubs and I just cut it in half and ate it alone.





Suggestions:
I served with a cup of heated prepared pizza sauce on the side, for dipping. 
Review: Depending on your tastes, you may want to modify the amount of cheese you add. The above is a great combo for me. This is so fast and easy, it's a great meal for those nights you don't really feel like cooking, but don't want to eat out. It would be great as an appetizer at a party, too - just cut it up into thin slices and serve.
