I've been such a bad blogger....

I have to apologize to all my followers because I've been the worst blogger lately! One of my classes is coming to an end so I've been wrapped up in studying for the final, and more importantly, we're leaving for vacation in Ocean Isle, NC on Sunday, so I've been packing like a crazy person. On top of all that, we also have a very good friend's wedding this weekend. How exciting! I know it's hard to believe but I did cook this week. I promise I'll post when I get back next Sunday. Here's a peek at what's to come:

Posts of the Week

Today is really turning out to be great. For starters, it's a Saturday in March and I'm not working. Woo hoo!! This will probably be the last Saturday until after April 15 I'll be able to enjoy this sort of thing. The weather isn't that great (it's a lovely 40 degrees F out today), but at least I can catch up on my blogging and go for a run on my treadmill. I also got to enjoy breakfast with my husband this morning. Here are a few shots of the scrambled eggs we made:

clstar of Cook Like a Champion made some delicious looking and beautifully decorated sugar cookies.

Joelen of Joelen's Culinary Adventures found a way to combine my affinity for Mexican and Pizza with these Mexican Calzones.

And the winner for "most interesting and unique recipe of the week" goes to Joie DeVivre for her Peanut Butter Quesadillas.

We also got a new camera about two weeks ago, so here are some pictures we've taken fo the cats. Now I just need to figure out to photograph a white cat better!

Favorite Posts of Last Week

Since I can't cook for myself anymore this time of year, I like to live vicariously through my favorite bloggers. Here are some of the recipes I wish I had time to make this week.

Spanish Smoked Paprika Wings from Cathy at Accountants can Cook? - I love wings, too, but I prefer the boneless version because they're not as messy.

Spinach Apple Pasta by wifeplzak of Big City Cooking - This looks like a light and healthy meal that wouldn't take too long to conjure up.

Creamy Chicken, Vegetable, Orzo and Potato Soup by Carol at Bunny's Warm Oven - I'm not normally a fan of creamy soups, but looking at the picture, it doesn't look like it's really creamy. I do LOVE chicken soup, so this is right up my alley.

Potato Chips by Joelen at Joelen's Culinary Adventures - yum! potato chips, and what a fun way to make them.

Steak Salad by Erica at Erica's Kitchen Adventures - I love the picture of her salad. It looks like it's really filling and would make a great entree.
