Sunday Afternoon Cocktails - Mint Bailey's

Before I get into this post, I need to apologize for the lack of posts lately. It seems as though tax season has gotten the best of me already and I'm not even working that late yet. Over the next two months I'm going to try and set up posts on Sunday to post throughout the week. Unfortunately, tax season also means little or no cooking! Most of my dinners will be provided by the firm I work for until April 15. I'll try to post as much as possible, but please bare with me!

Happy Belated Valentine's Day! In honor of the holiday, here is a great cocktail using Bailey's with a hint of mint.

Bailey's and Amaretto

Ingredients

1 oz Bailey's with a hint of mint
1 oz Amaretto
chocolate syrup
handful of chocolate chips
martini glass

Directions

Put chocolate chips into a heat safe bowl and melt. (I melted them over a pot of boiling water, but the microwave would work, too). Once the chocolate is melted, take your martini glass and coat the rim. Place the glass in the refrigerator so the chocolate sets.

While your glass is chilling, combine the bailey's and amaretto in a shaker. Add two ice cubes and shake. Take your glass out of the fridge and pour some chocolate syrup on the sides of the glass. Give your shaker one last shake, then strain the contents into the glass.



Review

I made this drink a little too chocolately. If you're not that into chocolate, I would forego the syrup. Other than that, this was delicious.

Pour liquor into a shaker with one or two ice cubes.
